Dufry Opens New Debonair Food Hall in Palermo's Falcone Borsellino International Airport, Enriched with a Casual Dining Concept Created by Celebrated Chef Ciccio Sultano
Dufry Group brings a stellar dining experience to the southern Italy hub of Palermo Falcone Borsellino airport, introducing three casual, street-food spaces to the airside food hall.
The first of the three is the new I Banchi restaurant, designed by the celebrated chef Ciccio Sultano and inspired by traditional Sicilian cuisine. This concept enriches the group’s gastronomic offer introduced at Palermo airport in April this year, with Spinnato, the much-loved Palermo pastry brand, and Wascoffee Lab, a modern street cafe format created by Autogrill and characterized by its sustainable design solution, with furnishings made with "Wascoffee", a 100% natural material repurposed from recycled coffee grounds collected from the group’s establishments.
"We are further consolidating our presence within Palermo airport, responding to a very specific need, combining the international vocation of the airport with our knowledge of the territory and with special attention to the enhancement of the local food and wine heritage", commented Luca D'Alba, General Manager of Autogrill Italy. “We have selected well-known local brands and brought Sicilian culinary excellence to the airport, to offer passengers in transit a great variety of typical traditional dishes”.
The group will continue to expand its presence in the Palermo Falcone airport food hall, with new concepts expected to be introduced towards the end of the year.

I Banchi
"Educated cuisine", is how the famous – two Michelin star for his restaurant "Duomo" in Ragusa Ibla – chef Ciccio Sultano, describes I Banchi’s gastronomic proposal. Traditional dishes are revisited in a modern tone and prepared with care using high-quality ingredients. Travelers can enjoy a mix of street food, fine dining and the great classics of Sicilian cuisine, in a stylish and modern setting.
Wascoffee Lab
Wascoffee Lab is the modern cafe format created by Autogrill, based on three pillars: sustainability, innovation and the group’s love of coffee.The concept, which offers travellers a wide selection of oven-baked, modern patisserie and club sandwich products, is a veritable laboratory of innovation: the design and furnishings are crafted from "Wascoffee", a 100% natural material created by Autogrill, made from recycled coffee grounds, collected from the group’s establishments.
Spinnato
Spinnato, since 1860, is a meeting place that has become part of the heritage of the Palermo gastronomic tradition over the years. Just like the original Spinnato found in Politeama, in the heart of Sicily’s capital, the cafe offers Sicily’s most-loved specialties; cannoli, cassate, almond sweets and biscuits, as well as the unmistakable rotisserie specialties that entice travellers to stop for a light lunch on the go, for a lazy breakfast or an aperitif with friends. It is a concept that celebrates the Sicilian heritage and where travellers can find a sweet souvenir to take back home with them.
